Currently the Executive Chef at Clay Restaurant in Harlem, Gustavo has earned acclaim for his menus that seamlessly blend tradition and innovation. His dishes tell a story, carefully crafted around seasonality, texture, and refined technique. His culinary philosophy is both collaborative and curious; he maintains close relationships with local farmers, fishermen, and purveyors to ensure the highest quality, sustainable ingredients.

Gustavo’s extensive resume includes stints at some of NYC’s top-rated restaurants, including DBGB, Hearth, Del Posto, and Scarpetta, where he honed his skills and cultivated a style marked by bold yet restrained flavors that emphasize layered complexity without excess.
